Do it for sure. If it is already getting machined for pistons etc you may as well deck the block. It is defiantly important when running a mls gasket to have both surfaces perfectly flat. Not too much of an issue with a standard gasket but still a good idea.
Also they won't take much off so no worries with the head gasket thickness. A little more compression is good for off boost response :)
