The number relates to the temperature.
[snip to avoid confusion] <- Just did a bit of a search, each manufacturer has a different system. For NGK at least, the higher the number, the lower the temperature. If you go too low you will suffer from premature fouling as the plug can't "burn-off" the contaminants.
