Twin SUs will be better than a single weber.
It also depends on which SUs you have. Some have poor performance for emission control. If yours work good, it's fine, otherwise you might try to find a genuine pair of Datsun 1200 GX Hitachi carburetors, those work perfectly with the GX engine.
