Running without a thermostat causes the engine to run under-cool. Less fuel economy and shorter engine life is the result. Never heard of it causing the engine to stop running even in cold weather
If the thermostat is in place, but stuck/sticky ... it can lead to engine overheating. Unlikely to only happen during cold or rainy weather
Perhaps the most common cause of sudden engine stops during driving is loose wire connections in the distributor. So see if they are tight: * two inside wires (4 screws) * outside wire connector
Also check the small wire connections at the coil and at the resistor
