Pretty sure it is possible to get a car like this registered. You'd need to meet the current ADRs for a one off build, the starting point would be talking to an Engineer that works in the area. You can register anything if you can meet the ADRs.

I love it. But there's a bit of me that thinks if you're going that far why not install the current 6.2L grunter? Unless of course it was done before they were available.

Got a bit of sun through the back windscreen over the years by the look of it. Who can tell at the front, they don't look like the original seats, at least not both of them!

That sounds alright, I couldn't find anything in the wiki on what strength the standard bolts/ studs are.
Just thinking about this from a different angle, the number of bolts is probably driven by the need to make the gasket seal as much as anything meaning stiffness is more important than strength. Stiffness is fairly constant across steel grades, ~200GPa.
