economical to me means getting the most bang for the $$ so I would be thinking of something like a std. SR20DET/6spd combo.
Keep it all std and reuse the donor car wiring, ecu etc., some simple fuel, brake, diff upgrades to make it safe and reliable, job done..
More than enough power std with plenty in reserve should you get the bug in the future.

EDIT: just noticed you said standard diff but I guess either are std just in different models..

All of the hyd h/brakes I have seen/used were Hillman Imp master cylinders and just inserted into the rear line.
Acted as a pass through normally and then applied pressure to the std rear brakes when yanked on.
Could also use any remote vac booster master cylinder as they do exactly the same thing.

I have a set of NZ made Coby brand, they are the big bore 4-1, twin sidedraught model, won't fit a std carb/mani without a grinder and hammer.. Bright orange  $250

could be an option but not in a hurry for it or anything, the coupe is now unreg'd and just sitting there while I have a work car, just don't want to inconvenience you by having it lying around under your feet.
Just let me know if you want it out and will sort something..
