alot of factors come into play
colour, quality wanted, full respray with engine out etc all that stuff
and then the main one it comes down to, is how keen the panel beater/spray painter actually is on doin the job, alot of em dont really wanna do that sorta work on a "datsun". shop around prices may vary dramatically good luck

a tray-back hilux???? pretty light and a bit bigger than a datto heaps of them out there too.
AC Cobra kit car???
60's - 80's corolla's???

Proton Jumbuck??? (the "new" datsun 1200) FWD but if ure goin to the trouble of a v8, converting to RWD with a tricked out rear end wouldnt be too hard and it wouldnt feel as bad to molest a proton as opposed to a datsun

suzuki capucccino (most suzuki's for that matter ares very light weight)

if u wanted to stick datsun, u got 200b's as well
Plenty of light weight vehicles out there
