Have a search on google try "tuning dellorto carburetta" or something there is a graph that allows you to work out the right venturi size for a certain size engine and engine rpm of redline or max power then once you have the right venturi you can use a formula to work out basic idol jets, main jets, air correctors and emulsion tubes these wont be perfect but your car will run with abit of fiddling enough to work out the right components.

I used the graph when i had a dellorto but i cant remember the jet sizes of the top of my head.

for 1200cc @ 6200 RPM

try around:
27mm chokes
105 - 110 mains
160 - 175 airs
35 - 45 idles
30 - 35 pump

remember that the idle jet will have the most influence as most street driving is on partial throttle movements. idle and progression circuits are primarily metered from the idle jets.

Here is a pic of the relationship of the fuel circuits

Another consideration is the engine compression and the type of Cam shaft installed.

Also make sure that both carbs are balanced and synced. If you here popping or backfiring back through the carb [one barrel or more], this usually indicates that the mixture is too lean. There is plenty of info on the web for tuning sidedraught carbs on the web.

cheers
Benny
