I'd say get of much of it as you can sand blasted.

also make sure you dont get bored of it other wise it will never get finished.

You can get the paint removed by a professional abrasive blaster, but stay away from 'sand' blasting as the sharp angular particles will damage the metal surface. A reputable place will have much better materials available that will not damage the body panels.

My car was 'lime' blasted & it was done as a paint removal exercise only, not for rust removal as there wasn't any.

i don't much about datsun 1200's but i have reastord 2 old dodges do what the other people said get rid of the paint first then worry about the rest. do you have a engin? because if you don't you sould try going with a bigger one try something new and if it works you will be well known. (trust me) ps.(dont ask what type and how to put it in just measue it and thow it in).

Before you strip the paint and end up with a bare body sitting there gaining surface rust. Think about sorting out the tray floor, what engine you will use, then fit the engine and make a transmission tunnel, sort your wheels out and mod the front guards at the front if need be.
Then once all this is done, you can then begin to sort out the body for paint prep.

i'm with phunk, make sure everythings the way you want it first, and you have a all the panels you are going to use

otherwise you're gonna double up on stripping and spraying

get the back sorted and start collecting any missing bits (interior/trim)

basically the more decisions you can make and stick to now the less work you will have
