if we are talking about angle milling we straighten up the valve angle ie:cut more off the spark plug side.you only do this stuff if you have done everything else first ,big valve port job etc and your looking for that last little bit just get it faced flat again
none of us can tell you how much to cut off it .i would suggest minimum we dont know how much comp you have or how much you need. turbo low comp methanol high comp
negative deck heights dont give piston to valve probs unless youve mashed a lot off the head too or have a big cam. can help to get the piston as close to the head as possible to reduce detonation 0.030" clearance min.
you must measure all this stuff if your doing a modified motor .everything you change from stock may affect other things dazza
