the choke plate is open when the choke is all the way in
i just replaced the plugs which are bp5es (and gapped them)
and they are dry and sooty
also at idle when the engine is warm no choke, fuel spits out the exhaust.

Another pretty common carb fault;

Can you stall the engine with the mix screw, carefully screw it in and when it leans out enough it should stall, if it doesnt stall someone may of wound it hard all the way in and damaged the end which will cause rich idle. If it does stall you can eliminate that issue and wind back out to where it was originally. Then start looking at float level etc.

Do you have a manual?

My advice...
Your running to rich in you mixture and your timing may be out causing incorrect burning of the fuel/air mixture leaving carbon deposits in the chamber.

My advise would be to give her a good tune up once over and as stated above it will reward you in many ways.

Cheers
