Ok so I sourced a 370Z locally for a 7 speed transmission with console shift assembly and paddle shifty column assembly.

What else should I be grabbing off the Z for this to work for my car?

I don’t want to do that much cutting and sheet work to put the VQ in. Maybe for my car, but not hers.

Grab the ECU, TCU and wiring. Dunno how it would work as they are all interdependent

MegaSquirt has a "MegaShift" TCU for standalone operation ... but to my knowledge no one has made it work even with a five-speed automatic. Still it is supposed to handle up to 8 forward speeds but has only been verified with 4-speed automatics

Some guys have made the GM auto work with simple push buttons (using no controller) and not paddle shifters but literally one switch for each gear, like the Nissan there is a single solenoid for each gear. however that method does not provide for failsafe (failing solenoid) nor does it control the line pressure which I would guess on the Nissan is a PWM solenoid

If you go back to the early 1990s the Nissan four speed automatics are conventional -- no need for electronic control TCU -- as they only have electric lockup for the converter

looks to be a brain burning task.

I will purchase everything you have said aside from the motor. Less than $800 for all of it seems reasonable.

I havent gone to see how big this box is, but I am hoping its not too big to place under the car.

370Z uses JATCO JR710E

press release: https://www.jatco.co.jp/english/archive/news/2008/080305E.html

Like all 7-speeds it is close ratio with steep 1st gear for quick take-offs and low-low overdrives outstanding for fuel economy

This gearbox is also used in the Navara pickup, EX37, Infiniti G37 and the FX50 V8 has the high-torque version JR711E

https://www.hgmelectronics.com/compushift-sport-and-pro/ has a standalone controller which supports 7-speed autos (although none are listed), several 6-speeds are listed with Toyoda 8-speed tune "coming soon" ...
