I am about to rebuild the brake system on my "77" B210 HB. Notice that everybody and thier brother makes a caliper and piston for the car. Is there a consensus on which manucfacturer I should use?
I noticed that the raybestos professional grade friction ready loaded caliper is different in appearance.

I do not recall this ever being discussed before. I have no preference. With Datsun's design, even the cheap pads work well with no squeal.
I wouild guess that brand-new calipers will generally be better than remanufactured ones. But that's just a guess. Surely either would be better than rebuilt calipers.

I appreciate your help, I am doing a complete rebuild of the brake system and all of the suspension and steering componets. I want this to be a one time deal, done right the first time. I don't want to be stupid about the money, but like I said I want a worry free ride for years to come.
I am leaning towards the raybestos profesional grade brake components and moog suspension and steering with KYB for shocks and struts.
Any arguments about the aforementioned?
I don't plan on doing any racing or silly road pranks, but I plan on taking a trip across the USA in the spring.

No arguments against. KYB was the original equipment and I think they work excellently (at least compared to non-factory units). I would search out the original spec non-gas struts and shocks so that you get the decent ride Nissan designed. The KYB gas struts and shocks are harsh. They might be good for racing but are terrible for a highway cruiser.
