I would start with a 6 and see how you go, tune to that, take some 7's to the track with you and try them.
I would not even consider SU's if your looking at track work, they rely on good vacuum which you will loose running a decent cam to make power on the track. A good pair of webers are available these days for the price of SU's... get those and run two sets of jets, lean for the road, rich for the track.

The new Bosch Platinum plus are a good cheap alternative. Use standard heat range to start with and see how they go.

I run 8's and it starts fine and runs well? might still get some 6's its only mild, may aswell use the right ones.
