Call me a "noob", but how does this type clutch work, they have more grip right? But there is less surface area...

Normally the grip is determined by the friction material and pressure plate clamping force. High friction material doesn't need as much surface area.
It also lessens the inertia by having less material (i.e. mass) at the larger radius.
The center is solid to stop any failure of the sprung center (as in a normal street clutch) which means it isn't as streetable due to shudder etc on take up but won't rip the center out due to failure of the springs.

bah, not streetable my arse. i drove around with a solid centre clutch behind my L series for a year with no problems. my sprung button CA clutch was harder to drive with due to the extra clamping pressure wanting to kick your foot off the clutch pedal. cant say i noticed any difference in shudder
they are just a little harsher on everything after the clutch

I did say "not as streetable"

Everything is streetable..

I had a button clutch in my AWD bluebird with a CA18 and all of the clunkiness of the AWD drivetrain, very definately street driven!
