was just wondering if all 1200 ute steering boxes correct themselves once you've turned the corner (like if you turn the corner and let the steering wheel go, does it straighten itself up?) cause mine doesnt, just wondering if this was normal.

It's not so much the steering box design it's more a case of the wheel alignment. With proper toe in, and the factory (set and unchangeable without modification) positive caster in the wheel alignment spec, that's what makes them self centre.

If you really stuffed up the steering box (and I don't mean you personally, I'm talking hypothetically) you could probably get it tight enough that it wouldn't self centre, but personally I'd be more inclined to look at the coontrol arm bushes, ball joints, and caster bar bushes. If some or all of them were in worn condition it'd reduce the caster (potentially) and likely lead to it not self centering particularly well. You'd also likely see it if the tyre pressures were very low.

I have experience this before on my pick up. the problem was the tie rod ends and wheels not properly aligned.
