After having confirmation from another respected forum member, It turns out it was the brake adaptors from Datgx that caused the problems, if you have the chance to buy them be wary.

Anyone else got another set of adaptors that I could compare these to? I would be interested to see if / what the variation is. I will also be chasing some other calipers if anyone can assist?

Looks like the holes in the adaptor plates don't seem to be in alignment I.e. The radius dimension differs where the calliper lug mounts attach. Something not quite right there..

Turns out I have the same issue with the 120y struts as well. I will try different calipers I think. The photos are of the adaptor mounted in both directions.

Yes, slight correction from what I said, what I meant to say was that I have made a few s13 brake setups based on drum brake hubs on disk struts.

Hi benny, it's not the spacing that is the problem that I had. If you look at the first pics the caliper does not sit correctly on the stock 1200 strut, the brake pad surface is not in full contact with the rotor.
Also with the drum brake struts you have to weld on mounts don't you? With the disc strut you use the original caliper mounts. I have some drum hubs that I had on disc struts but was not happy with the lack of location for the bore of the rotor and these do need to be spaced 5mm or so from memory if using the drum hub as you mentioned.

I have made up a few s13 brake set ups based on drum brake struts. To correct the offset issue with the rotor, each time I sacrificed the original drum to turn it into a spacer plate. It locates exactly on the parent hub and is the correct thickness. 250mm rotor then sits over the top.

The 250mm rotors are right, I think I was trying to fit them to the wrong strut. I contacted Datgx a while ago and apparently they will work with 120Y and 1200 coupe struts. I have dummy fitted the setup on the 120y strut and it seems ok but i will confirm and take some pics tomorrow.
