It sounds like a pretty good idea to me. Getting two plates cut on a CNC; one to fit the engine and one to fit the box. Getting everything aligned will be a challenge?
I'll try to get the blueprint of the MX-5 bolt pattern. I believe a sandwich-plate would be easier? If I can't get it to align in CAD, then I'll move to making a Steel-Bell.

In the old days, before CAD and CNC, they did many engine swaps. They used calipers and drill press. Came out aligned well
