Ok so I sourced a 370Z locally for a 7 speed transmission with console shift assembly and paddle shifty column assembly.
What else should I be grabbing off the Z for this to work for my car?

you can also grab the vq engine as well :)) or a vq23dd from a cedric
to go with that

I don’t want to do that much cutting and sheet work to put the VQ in. Maybe for my car, but not hers.

looks to be a brain burning task.
I will purchase everything you have said aside from the motor. Less than $800 for all of it seems reasonable. I havent gone to see how big this box is, but I am hoping its not too big to place under the car.

This gearbox is also used in the Navara pickup, EX37, Infiniti G37 and the FX50 V8 has the high-torque version JR711E
https://www.hgmelectronics.com/compushift-sport-and-pro/ has a standalone controller which supports 7-speed autos (although none are listed), several 6-speeds are listed with Toyoda 8-speed tune "coming soon" ...
