2.5 is the only 4-cyl engine size here in USA. I've got the 2006 version, first year of VVL, which makes a huge difference

better yet buy a rusted/wrecked Legacy or Forester and swap the running gear into a 1200 ute. The rear is easy (been done before) and the front would need narrowing. Or maybe use the Leone front end as a Leone is only 30mm wider than a 1200

that thing is boosted DD and has massive traction issues maybe due to wheelbase
I think the 1200 front end is as good as the brumby as rwd only is fine :)

Yes, it seems there is enough room for a Subaru engine. 28.5" width for the EJ25 SOHC, 32.5" for the DOHC, 27" for the 2.2 liter SOHC. Datsun 1200 engine bay is about 30" wide. Not all Subaru engine will fit

Can you run a typical Subaru gearbox with the FWD shafts not installed? Use it in RWD fashion?

some interesting sizes to consider, yep you can use the awd box
that way and some cover plates but there there are FWD only boxes
on low spec subeys that are just right they are tough and look like this

However the subey motor is very tall with manifolds and other ancillaries
in actual fact same height as an A series complete running sidedrafts.
