You would be better of getting a thinner gasket. Why remove healthy metal?? If you were to skim the head, you would then need a new gasket, so why not just get a new gasket???

Your builder probably meant shave the head and use a thin gasket. 1mm isn't much, but 2mm is more than a thin gasket alone will accomplish?
I think you can shave about 6mm inch off an A-type head and not ruin it -- anyone know for sure? But the word is that a closed-chamber (heart-shaped) head is better if you want high compression.

Have a look at an a-series cylinder head & you`ll notice two casting depressions along one edge of the head-gasket sealing face.
These look like thumbprints. The manufacturer purposefuly put them there to guage maximum machining tolerance. When these thumbprints disappear, the cylinder head is at minimum thickness & is no longer servicable. Hope this helps you? You can view topic.
