The only way to keep it from being loud is to install a muffler. But you can finish the exhaust in many, many ways. For example my ute had a large muffler under the truck and a chrome cannon at the rear

For a stock engine, I would use 1.5" exhaust for maximum power. 1-3/4" will be a little louder but won't help performance (though it sounds tough!)

If you want a power-sounding (but only moderately loud sound) you can go with a "turbo" muffler (Dynomax 1.5" muffler $26). For good looks and longevity fit a stainless exhaust pipe after the muffler (or at least a long stainless tip at the very end)

There's a lot of room for mufflers

I’m going to get my UTE exhaust done but I’m looking for ideas , my truck is all stock, the current exhaust system is like home made , should I go straight pipe like 1 3/4 or should I go bigger , I don’t want a very loud truck , or should I install a muffler ?
