If you fit a Weber 32/36 or 180 Holley Carby onto a Datsun 1200, Would any modifications need to be made to the bonnet?

It sometimes depends on the adapter plate. I have seen bigger holley's that dont fit and a scoop or bonnet adjustment needs to be done.

I used a 1" thick space (2.5 cm thick). No clearance problems with the Weber 32/36 carburetor.
