I looked into doing exactly what you want to do.
The problem is for a 1200 ute or coupe, the shell is skinnier than a 120y.
You can run the diff not cut down but you need massive front wheel drive offset and flares. Flares are great however it is illegal to run different offset front to rear.
If you run +45 on the rear it might fit but...if you run +45 on the front you'll hit the strut tower.
Of course you could use spacers but these are also illegal unless they are machined onto the hub and engineered
If you put smaller offset you will increase your track width by more than 2.5cm, this is also illegal.
You mustn't increase your original track (centre to centre of rims) by more than 2.5cm.
Look at the cost of getting it cut down and compare that to a lot of paperwork, fines, and or engineering costs.
