About 10 mm - more than a skim. And of course the crank needs to be rebalanced after the machining process.

In my case I used a DatsunSport big bore gasket for the 1200 engine when it was 76mm, but I switched to an A14 gasket, suitably modified with a wad punch for the rocker oiling hole, when I rebored it to 76.5mm.

I don't know what was used in the stroker engine that I wrote of in my last post.
This engine used an A15 head so some thought & work would have been required.

In my Early A12 rally engine( Front Dizzy ) I ran 78mm Mazda pistons for 2 years with no problem, the engine finally died when a radiator hose failed and the engine melted.

My own 1200 engine that I used in my B10 sedan was bored to 76mm untill I eventually wore it out, so I bored it again to 76.5mm, ... again using A14 pistons. The only thing that finally brought this engine to a stop was a completely burned out exhaust valve but the bores are fine.

A local bloke here with a 1200 coupe is running a 77mm bore in a 1200 block & it runs sweet [& fast] This engine uses an A14 crank & regularly sees 6,000 + rpm, although I suspect that this bore size would be pretty much the limit.

Factory offered 76.8mm competition pistons for 1298cc capacity. 78mm bore isn't unheard of (but probably getting risky maximum) for 1340cc.

Part of me would like to build one of these motors too. I have an A14 crank, and a lathe capable of turning it down to clear the piston skirt. I also know where there is an A12A out of an LHD 310 2dr sedan. it's a shortblock, and I reckon the guy would probably sell it for next to nothing.
I did read an article about long vs shortrod motors somewhere. While long rods are prefered, it did say that a short rod wasn't always a minus on a turbo or nitrous engine. If you're using an A12 block for originalities sake, or for class regs then I guess those two options are pretty irrelevent.
