Thank guys. As it is manly a road car, I think I will stick with the 30's.
I originally wanted 32m cokes but have had trouble finding a set.
I did look up the model but it has slipped my mind. I think they are the more common type
R type rings a bell

Too large and you lose good throttle response (still works good at full throttle, high RPM, but not so good at lower RPM and part throttle).

If these are Mikuni PHH, you can buy the 32mm chokes and put them in the carburetors.

the common VM series mikuni comes in 2mm increments, from 20 to 40 or so. If you already know for sure that the 30's are too small, that would eliminate them. I've worked them on ultralights and 32 mm carbs are easy to find.

An engine with too large of a carburetor stops increasing its power/rpm when the carb opens in excess of what the engine can use. So adjusting them has to be different as they will be operating on the needle and needle jet, not the main jet as it controls say 80% to 100% and you will not be running there.

As Mikuni makes several different kinds of carburetors, the above VM series information could easily not apply to you.

This is about my 260z which I have just fitted triple mikuni's to. It has a bog stock l26. So I have fitted tiny little 30mm chokes but I also have a set of 34mm chokes.
One set is to small for this engine and the other set is to big. (Stock as a rock l26)
What would be better? To big or to small? And how would the larger chokes act compared to the smaller
