You may need to reengineer your rear suspension. Sounds like the drive shafts universal joints are "binding up". At speed, the rear of the car might get pushed down due to the volkswagen's aerodynamics.

The fact that it gets worse with more people in the car, gives support to my theory.

Raise the back for a little while and see if it continues.
