This is what a thermostat is for! Provided you have a thermostat your radiator can't be too big!
100% correct. The thermostat is what controls the engine temperature & the right size radiator simply allows it to do its job properly.

I run a stock 1200 radiator with new core & I have completely cleaned out the whole cooling system & replaced all hoses, the belt & the pump. It keeps my stock 1200 with auto right on the mark right through the hottest days, even at highway speeds.
Now that was in investment, not a cost.
