Mikuni choke sizes

This is about my 260z which I have just fitted triple mikuni's to. It has a bog stock l26. So I have fitted tiny little 30mm chokes but I also have a set of 34mm chokes.
One set is to small for this engine and the other set is to big. (Stock as a rock l26)
What would be better? To big or to small? And how would the larger chokes act compared to the smaller
