The problem with using another tunnel, or making your own from scratch, it that you need to take into consideration the heater box. Also, a modified Auto Tunnel is much easier for an engineer to certify. A full new tunnel (If not done properly) could really bugger up your project.

I like to fit the engine 20-30mm from the firewall.

I do much prefer the Auto Tunnel for CA transplants.
