the yellow and red area are valve seat. i found that yellow area are rather useless, then can i grind off this part? any side effect? air flow will be better?

That pic is not really right as the seat is strait, like a tube.

If you've never ported a head it would be a very bad idea to start on the seat area as you will get in to trouble very fast.

You had better not sharpen the valve seat very much.
There is the case that a problem is over in strength.
When a valve seat sinks into the cylinder head, there is it.

I have spoken to quite a few guys about the venturi affect (when a tube is tapered it forces the air to speed up) around the valve seat and I have been warned against removing to much material as it promotes slower air flow (not a problem if you are running a turbo), just something to think about.
