Its not really the lack of water cooling that overheats an A series on the track...its the oil which gets too hot and can actually boil. Yours is a good sized radiator but you'll need to get an oil cooling system for track work.

The radiator should keep the engine at the same temp as the thermostat: 160-degree or 180-degree depending on which thermostat you have. The 180-degree is generally best for street (higher temp for economy, but low enough to run a 7-lb cap).
