I say steer away from yellows, oranges, blues and especially SILVER
Go for something no one has, Apricot? Lime green? A pastal colour?????
I think it all depends on if you want old school or new look?
If its just a plain look go for an original datsun colour, small nice wheels and you'll be sweet.
If you want a new look go a modern metallic colour, nice big rims and I think interior colour is an easy one to pic once you choose a colour to spray it.
I would;
- decide what look i want to go for.
- choose a colour that suits that look
and then for interior go original datsun/colours
Or full modified interior with leather/velour retrim.
Im starting to bore myself but you wanted some ideas and here are a few of mine.
Hope I haven't confused you.

I like that 'Le Mans Sunset" that new Nissan 350Z's are using. Might look nice on a Ute.

My mate always aske me if i just cleaned my car when i havent cleaned it for weeks (and no wax job for me, just good ol hard soap for my baby), take a look at my pics in my profile, i never washed my car before taking them and i think it looks pretty good

how about datsun rally red and black? Could be cool on a ute. I've considered this for my 210 but I don't want to change the blue interior and it wouldn't match at all. I"ll probably have to go with white or black.

As for me, the faded, flat green paint with primer accents is a major component of my anti-theft system.

I'd some day like to paint it like this...
