Could always use another speedway, don't think there are any other in the area (Hay), closest might be Dubbo.
I'm sure if you're willing to put up the land to use then there would be lots of people willing to help with the earthworks

You're on the right track, however it is the valve head that expands the most therefore pulling the stem further away from the rocker.

Throttle bodies would be my choice every time, as long as they were at least the same size as the webers they are compared to.
Some of the benefits of using throttle bodies with injection - Not so critical to keep the air speed up at low revs, which means you can run a larger size throttle. Also with injection it inherintly allows for a 'bigger' cam to be used.

LTR, do I have this right?
The head will be supplied "as cast".
It will need - All mating surfaces machined. Ports given a final touch up to get rid of any casting marks. Valve guide holes drilled and guides fitted. Valve seat locations machined and seats fitted. Valve spring seats machined. Oil feed gallery drilled. Rocker shaft pedestal mounting holes drilled & tapped. Spark plug holes drilled & tapped. All manifold mounting holes drilled and tapped. Thermostat housing mounting holes and any bracket mounting holes drilled and tapped. Water temp sender location drilled & tapped.
Have I missed anything?
And you said you have the rocker setup available to use as a model, are you able to get someone to draw it up in CAD and send the file over? That sort of stuff may be easier to get made locally if all the specs are made available.

Looks like there are mounting pads on the intake side of the head for the second rocker shaft.

Sounds like there could be some crud in the carby.
Give this a try.
Put plug lead No.2 on No.3 plug and plug lead No.3 on plug No.2.
Start the car and give it a couple of light to medium throttle revs, you will get some back firing happening through the carby which is the point of the excercise.
Once that has been done put the plug leads back in their correct locations and see how it drives. If its better you at least know where the issue is and can either pull the carby apart and clean it out now or wait until it plays up again then clean it out.

I'm getting the impression you haven't driven a well sorted Weber fed car Sidedraft?
Edit: Sorry, just realised you were comparing SU's to a single downdraft in which case I tend to agree that th SU's would be the better option.
