Can anyone tell me if there is an accelerator cable from a modern car that I would be able to buy off the shelf at Repco or Supercheep today that would fit my 1200 ute?

Modern car? Something from the last 10 years? Nothing , unless they sell 2008 Nissan 1400 parts

They sell 1200 cables at my local auto parts store for $15. Bproject web store also sells it

You might be able to rig something up using a bicycle brake cable, but it wouldn't be a direct fit (obviously)
