205 are pretty much the widest tyres you can fit on a standard rear end. You can move the leaf spring mounts in on the back. Doing that with standard wheel tubs will allow you to fit 225's. DVLDAT did that on his so you could do a search on that.

So it just depends on how much you've tubbed yours and how much you have or are willing to move the mounts in.

The next step after that is going a coilover rear which will be $$$

fwd offset is just a more positive offset.
I think simmons might be a bit soft with low profile tyres, if you hit a rock/rut too hard you might bend them.
You can get 16" wheel and tyre packages pretty damn cheap these days, I recommend Concept5s, they seem to go well on dattos.

Truly our wheel choices are the suck.

The wiki should have a list of wheels and notes on what was done to fit em.

If you have enough $$ then there are options, but then again you can just have custom wheels made.

Hey guys just new to the forum and to datto's. Bought my ute 3 weeks ago and havnt stopped playin with her since... Anyways here's some pics of some Concept5s and the other pic is what was on there before, which didnt look too bad but had the wrong offset and was running a massive spacer.
And with the Concept5s i am getting 40 series rubber instead of the 45 they scrubb out way too much, cant even turn a corner imo

I didnt get the pics up first go, i had to edit a couple of time.. I also own a 68 mini van so i have been on that forum for a couple of years now so after a couple of goes at it i was able to get the pics up. I am gettin the right rubber for them today sometime so ill post up some pics once i get them on there, they should look alot better.
And for choice of rims i didnt really want to change them but because the ute is registered in QLD and i want to change it to NSW i have to get a blue slip and they wont pass it with wheels spacers on and they old wheels wouldnt fit with out them on and they were an inch thick....
